The All-American hamburger may be easy to grill but taking it to the next level requires some basic tips and techniques. According to legendary chef Bobby Flay, it’s best to use lean hamburger meat (or, if you really want to go to the next level, ground venison), with a ratio of 80 percent meat/20 percent fat. This mixture will both hold the meat together and keep it from drying out when grilling, as is the case when using leaner meat.
